I have several odd knife sharpeners and a whet stone that I could never figure out how to use properly and they never sharpened my knives very well. The Chefs Choice 463 was recommended by America’s Test Kitchen and I trust their product reviews so I bought this sharpener while it was on sale. I’m so very happy that I did! I’ve had my knives sharpened professionally over the years and was never happy with them after they were sharpened, especially considering how expensive it was. Following the instructions I first sharpened two of my older smaller knives (Henckels) that were very dull. I used the “sawing” motion recommended in the instructions, though did have to pass the knives through the sharpener about 20 times to get the sharpness I wanted (they were REALLY dull!). I was so impressed at how easily and quickly they got sharpened to the the edge I wanted that I then sharpened by 2 big Wustoff knives, and was equally impressed at how easily and quickly they sharpened up. I just sharpened 4 knives to the exact sharpness I wanted at a cost that was less than the professional sharpeners were charging me. And I did it in my own kitchen and it only took a few minutes! I’ll never have to send my knives out to be sharpened ever again!I read other people’s reviews, positive and negative, and took those into account when making this purchase. I can only report my own experience, which was very satisfactory. FYI, I’m a senior citizen and am not much of a do-it-yourself-er, so if I can figure out how to use this then anyone can. My only recommendations are that, 1) you place a mat or some newspaper or something on the counter next to the sharpener when using so that if you pull the knife all the way out by accident while sharpening you don’t nick your countertop, and 2) don’t be ham-fisted and press down really hard when sharpening. Believe me, you’ll still get a great edge with just a little pressure. Based on some of the negative comments I read I think some people may have put too much pressure on their knives when sharpening. I plan on buying one of these as a Christmas gift for someone and have already recommended it to several cooking buddies.

There are two types of people looking at this knife sharpener: (1) people who just want to make their knife more usable in the kitchen, and (2) people who are nerding out about sharpening their knives, but have hesitation. This knife is the best option for (1). Last year I purchased a nice chef’s knife for the first time. After a year of use it had grown dull. I needed to sharpen it, so I started researching how to sharpen knives. I watched videos about sharpening with stones, and reviews of electric and manual sharpeners. The type (2) people all recommend stones; they talked about how easy it is, how sharp you can get, etc. I wanted to take care of my knife because I want it to last a lifetime. These people were pushing me to join them in camp (2), but I ultimately realized I am in camp (1). Yes my knife is nice, but I don’t need to sharpen with stones to take care if it. Now it was time to narrow down my decision between electric and manual. This was the only manual option I considered because it was recommended by America’s test kitchen. They suggested electric options are better because they are easier to use and produce a sharper knife, but I feel like that guide is wrong for most people. Most home cooks are not looking for a razor sharp knife. You want your knife to slice through tomatoes without smushing them, but besides that who really cares? I guess the only legitimate downside of this device is it may scratch the sides of your knife slightly, but my knife is a tool, not a relic to be polished to perfection. This manual sharpener is cheap, stores nicely in my kitchen, was stupid easy to use, and brought my knife back to factory sharpness. Of course this device will not sharpen your knife as well as electric or stones, but I don’t need that. As for price, there are cheaper options out there, but I trust America’s test kitchen more than Amazon reviews. If you are brave you could try a cheaper option with a similar design, just make sure it uses diamonds for the grinder, has at least two finishing levels, and produces a 15 degree bevel.TL;DRThis sharpener gets the job done for a home cook, it’s cheap, and it doesn’t take up much space in the kitchen.

I’ve sharpened most of my knives, and I find the Chef’s Choice 463 to work well. It says to pull the knife back and forth (like a saw) which didn’t seem right to me. But I did it, and it works. My knives are sharper–although not as sharp as I would wish. I may have to do them once more. But all in all, this is a good sharpener.

This is a steal when it is on sale. My last one gave out after 15 years. This one is much better than the Henckels. If I have to put an equivalent it is similar to the sharpness of a 400/1,000 Grit stone just as sharp. Ignore the razor sharp reviews you won’t be able to shave with your knives. Definitely not as sharp as a straight razor. However, great for cooking and chopping. I recommend for knife sets under $250. If you have a higher end knife sets consider electric or stone.FYI The only reason I have a sharpening stone is for my fishing knife to gut and filet fish. Easy to wash and throw around. For kitchen knifes stone takes too much time to sharpen- I tried it and broke down and bought this when my Henckels sharpener gave out. Happy with my purchase!
