I can make a plane iron or chisel sharp enough to shave with, but a knife is a different story. I have to hold the blade at the same angle while moving the curved edge on the stone. If that doesn’t happen the edge is going to be just a metal edge. This setup lets me hold the angle all along the blade. After a couple of knives I can see it does well. I did upgrade the stone to DMT diamonds. The stones that came with this are ‘ok’, but are thin and if dropped you’re sharpening session is done. The finer grits work fine, but the 120 grit wears away VERY fast. After a few blades where I needed to establish a new edge the 120 grit is already severely dished. The other stone will get there, too. Overall it works well, but I think a lot of use will require some parts be replaced- especially where the rod holding the stone goes through a teflon ball.

I’m pretty new to sharpening with stones so my experience is limited. I tried using a flat whetstone but couldn’t keep the angle consistent enough – some knives sharpened better than others. It takes a lot of practice to get good at it and most people don’t have that time. I just want to sharpen knives once a month or so.So I bought this. So far this thing seems to work as well as you’d expect. Setup is a little finicky, especially trying to get the angle right. I wish there was some kind of built in gauge, using the cell phone with an angle app works but is a little awkward with larger phones. The nut that tightens the jig to the rod won’t tighten well by hand – it need pliers to be tight enough to prevent slipping. It can be replaced, I’ll have to find one from the hardware store that fits, preferably either winged or hex. It also doesn’t need to be fixed as long as you fix the locking piece below it, keeping it loose allows for better jig articulation but higher risk of moving it off angle.Once set up it works mostly intuitively, though it will take practice to get the push/pull strokes smooth and even. The included stones are clearly low quality and will abrade really quickly. They also seem coarser than I would expect for the rating, though I’m no expert here. I’m going to try and find some decent aftermarket diamond plates to use. It looks like the EZE-lap SF series will fit, and they’re affordable at $15-20 each. There are cheaper ones out there but they look sketchy. I’ll update this review accordingly.With the new Work Sharp Precision device coming in around $50, this jig, while a good value, isn’t as good as it once was. However the work sharp is more proprietary whereas this one allows for more modification and stone/plate options (so far).

The part that holds the knife and rotates 180* does NOT keep the same angle from one side to the other. That is the only reason I deducted a star. That being said using some painters tape to shim the contact surface between the knife and clamps and got it to an acceptable level, within .2 degrees from side to side.Overall I was pleasantly surprised with the quality of this tool. It is more robust than I was expecting. I added some grease on the shaft that slides and the white ball that moves and supports it. I also greased the barrel of the flipping assembly. They are smooth as butter now and work easily.The stones I received were all intact and flat. I can’t speak to the trueness of grit but they work well and the polishing stones are FANTASTIC! All my knives are extremely sharp and have a beautifully polished edge. I’m talking mirror finish. Having now sharpened about ten knives I am very happy with this product overall.I changed the bevel on one knife and it rounded out the lowest grit stone. The other stones are holding up well. The polishing stones are absolutely awesome! Highly recommend!

I did not have success with this product at first because I thought my kitchen knives were semi-sharp and could start with the middle grit stone. I didn’t achieve success so I started at the lowest grit stone and worked my way up. Boy, could you tell the difference. By the time I had reached the middle grit stone the knife was super sharp. Then at the end… HOLY COW… I’ve never been intimidated by sharp knives, until now. Because this knife was RAZOR SHARP. IF I finished it with a stropping block it would literally be a straight razor. Love this product-great invention-don’t waste your money on all these other sharpening “Systems” like I did. This will be the LAST one you buy! Oh, forgot to mention, this will work on your everyday carry knives as well. My dad found a Gerber knife in a parking lot and it was duller than a butter knife. I was happy to give my new knife sharpener a run for the money. And sure enough, I handed back my dad a razor sharp Gerber π So cool. I’m still geeking out because I SUCK at sharpening knives and I’ve bought all the sharpening systems on the market. Yes, the expensive ones too. Sooo happy with this one π Anyways, have fun making razors π

I spent over 26 years and some of the finest kitchens in the western United States from Reno to San Francisco to Seattle to Bend Oregon and we all used the tried-and-true oil bath tri stone. This device has the ability to set the correct grinding angle to the blades. Itβs not as quick as the videos show, but then my knives have not been sharpened since the mid-90s. The first knife I sharpened was a small folding Gerber pocket knife. Extremely hard steel and it took quite a bit an effort to sharpen 2 1/2 inch blade. The other night they sharpened was a 9 inch carbon steel very thin blade fillet knife. It took quite a while to get the two knives to wear they would shave arm hair like a straight razor ! I recommend this sharpener because of the ability to set the correct angle. I strongly recommend not trying to get too much done quickly.

This sharpener isn’t marked, and includes no tool to set the bevel angle when you sharpen knives. They expect you to have your own level or angle finder, which is frankly lame. I haven’t used it yet because I’m now having to find something to help me set up the angle before I can sharpen anything. It seems to have OK build quality. Can’t speak to “ease of use” yet, since it requires an external way to set up the angle. Meh. You could have included something for another 50 cents.
