I like it for deboning chicken legs very much. The narrow tip flys through meat with ease. Iβm not sure about the quality of the steel is still not great in my opinion. If you cut meat on a dinner plate the edge is gone in a few strokes. Iβve cut many deer with a few different knives we always have them on nylon tables. Iβm looking forward to using this knife to see how it does. I normally use curved hunting knives for this. The Outdoor Edge 7 cm does alright. But after watching Bearded Butchers too many times. I bought this knife. For $12 bucks I can touch it up in a few strokes on a steel and itβs ready to rip agin. As can be seen in the last picture the edge is a ruff factory finish. Could definitely use a good trip to a wet stone.

Use it for cutting up brisket. The only thing it lacks is a sleeve to keep this super sharp blade safely stored, that is the only reason I’m docking one star.

Almost cut the tip of my finger off till it hit my fingernail when I was trimming the stems of some flowers.It works really well for trimming the fat from pork butt and brisket.
