Mandolins are great for thinly slicing foods. But it seems you get what you pay for.My first mandolin was a pretty cheap plastic model. It sliced food ok, but the dial on the side where you select the thickness sucked. Any pressure on the top would drop the platform making slices progressively thicker as you sliced. If you werenβt paying attention, you could start with paper thin slices, and end up with 1/4β thick slices by the end. And the included finger saver sled wasnβt great either.This mandolin is a night/day difference. The sled is spring loaded so it keeps the food on the bed. The blade is super sharp, so it is effortless to slice foods quickly and efficiently. Itβs made primarily out of metal, so it doesnβt feel flimsy. And the thickness dial stays right where you set it, so all slices are uniform thickness.Iβve only done slicing so far, so canβt say much about the julianing or other cuts. But overall, I am happy I spent the extra money and got a high quality mandolin to replace my old crappy one.

I don’t want a huge food processor – I had one and gave it to one of our kids – too complicated to store it, clean it, and just not worth it. This mandolin is perfect for me. Originally, I was just looking for something safe and fast to shred cabbage – without shredding my fingers or throwing away a lot of cabbage. I got this OXO (all stainless version) and absolutely love it. (1) the blade fully recesses for safe storage; (2) the stand folds flat underneath and snaps over the veggie holder so everything is in one flat safe piece for storage; (3) so easy to clean – quick rinse in hot water; and (4) somewhat infinite slice thickness possibilities. The first time I used it, I read the instructions twice and was concerned it might just be one more “thing” that’s more trouble than it’s worth. Not so! I suggest you read the part about the blade and safety, and then just go for it. I use it for everything for my slaw now, not just the cabbage – the celery and onion too – done in a breeze and no waste. Find myself using it for other things now – carrots, cukes, peppers, etc etc etc. Anything that needs slicing or dicing. It’s worth it. Tip: do absolutely get a protective mesh glove and use it every time. Which is good advice for anytime you use a blade or a knife if you are not a pro (I just can’t get the knack of folding my fingers back out of the way of a blade).

Product appears to be well designed and strongly built.DULL BLADES!The knife edge is slightly chipped on one end and very dull; it looks like it was hastily ground with a medium rotating stone which defined an approximate 15 degree angle. The opposite side has a well defined serrated edge which also appears ground, but not to a fine edge. Out of the package this would be of little use to me.I touched up the knife edge but did not get it to a ‘razor’ edge, but it was much better. Even as such it would not successfully slice a very firm tomato.Making sweet potato fries yielded new discoveries. This fruit is relatively hard and tough, so i expected some difficulty, and was not disappointed. Because of the shape, making long fries means pushing the potato by hand from the top; glad I ordered the recommended glove! When slicing, the sweet potato tended to climb upward in front, which meant the individual ‘shoe strings’ were still stuck together when they emerged (i.e. the fruit had lifted high enough that the mandolin blades didn’t cut quite through). It required MUCH downward and forward thrust to work the fruit through the machine. At one point the mandolin blades caught the glove but did not penetrate.The unit is easy to clean; when doing that I discovered that the mandolin blades that pop up for doing fries or julienne are DULL. Sharpening the knife and serrated edges are relatively easy; to sharpen the mandolin blades will require product disassembly. Why is it up to the end user to do these things?Dull blades are VERY DANGEROUS because they require unnatural effort and may expose the operator to the blades when the fruit breaks (instead of slices). Ask any chef or butcher what he or she thinks of dull knives.I like the product and will spend the time to properly sharpen the knives. This should give many years of service.When you buy a knife from any reputable manufacturer it will come with nearly a razor edge or better. I hope the good folks who make this product have wits sharper than their product’s knife.

It is an expensive mandoline. I expected more from it. Pros: easy to clean, seems to be solid, easy to operate, easy to set up, great for choosing the thickness for the slicing. Cons: The blade seems to be dull compared to my other 2 mandolines, I wasn’t able to cut carrots in julienne stripes, ended up using my old mandoline for that. I didn’t have much success with french fries either. In both cases, it would not slice all the way, had to separate by hand, which defeats the whole purpose of accomplishing the work quickly. Overall not happy.

I’ve bought and used a cheap mandoline in the past and lost it when I moved. I have had great success with OXO products in the past and saw this was highly recommended. I kind of wish I went the cheap route again.The blade seems to be dull out of the box. I don’t recommend this for small food items. I feel like it works better the larger the food item is. I will be experimenting some more with it and might possibly update my review if I find a better way to use this or maybe I will reach out to OXO to see if warranty will cover sending a new blade.
