The Good: Quality and finish. They work effortlessly. Very balanced and sharp. Fits medium to medium large hands.The Not so Good: You cannot disassemble to thoroughly clean them. Instead of a removable threaded pin, the two blades are held together with a large hammered pin.The Bottom Line: Really nice shears, but itβs a pain to clean under where the two blades interface. Oil that point real well before you ever get them wet. Upon under there with a food-safe oil like avocado. Then after use, wash them, air dry them, and oil them. They stainless, so they wonβt corrode, but when you cut raw fish, meat or poultry you really want to make sure they are clean where the blades meet / pivot.I wouldnβt put them in a dishwasher, as they have beautiful wood handles. If you are looking purely for kitchen utility, and donβt care about design and finish – get a pair of stainless/rubber shears that disassemble.

My likes are simple. These shears are styled similarly to my K.Sabatier “Bellvue” knives. Full tang, black handles, they look good in the knife block. They look good.I have experienced two problems, the first within minutes and the second after first use. With regard to the pair I was sent, the shears “locked up” after only a few minutes. While testing the spring action and being pleased with my purchase, all of a sudden the shears became impossibly difficult to close (imagine a a grown nutritionally advantaged 6’3″ man squeezing with substantial force to get the dang shears closed and then having to use both hands to pry open. After fiddling with open and closing, pulling and twisting the handles, the shears then returned to normal, then did it again, and again. Obviously a manufacturing defect, exchanging because of this.Second issue and I STRONGLY SUGGEST you all pay attention, the shears appear to have a high carbon content or are using a steel with a lower stainless quality. Before I sent the shears back, I spatch cocked a chicken, the shears locked up midway, but I was able to wiggle the shears back to working. I rinsed the shears to remove the juices and placed in the sink. I then had the brilliant idea to really clean my All-Clad fry pan that had accumulated months of stains. I sprinkled some Bar Keepers Friend on the pan and some of the powder landed on the shears (sitting in the sink), I then scrubbed my pan, washed, etc. When I picked up the shears I noticed these “spots” and all my scrubbing with soap and a melamine sponge failed to remove. Please note that the stainless steel used is prone to staining when using BKF.I am exchanging because they feel like a good quality shear AND aesthetically fit the look when sitting in my knife block (important to me). The stain resistance is unfortunate, but not a deal breaker for me. The fact my particular shears suffered from randomly locking up tells me I likely got a defective pair.2 Stars poor quality control. Will update after my exchanged pair is received and used a bit.

Really love these shears – I use them to cut through lobster tail shells and they work really great. My first pair I put in the dishwasher and it affected the spring mechanism, so I ordered another pair and won’t do that again! Very easy to use and cut easily through the thick shells — and I have small hands. Love ’em!!

These are very sharp. The handles arenβt good for grip or leverage. Very slippery when you have meat juice on your hands. I used them to spatchcock a turkey. If you donβt have grip strength you may want to keep looking
