There needs to be, in big and bold, an immediate alert to put the two live cultures (which are the most expensive parts of the whole box and the entire reason to get the kit in the first place) in the freezer or else the entire box is wasted. Not everyone knows this information and I came across the information by accident, after leaving it on the counter over night. Not that I care at this point because I’m returning it. They spend more time talking about the box than what is most important, the Mesophilic Culture and Calf Lipase. Also, as I write this I happened to also notice that the Renee needs refrigerated.If you are getting the Ultimate box, the thermometer is more than 6 degrees off, so I suggest getting the cheaper box and buying a good thermometer. Like all cooking it seems, the devil is in the details and 6 degrees will kill your attempt at success.The next thing is my bias but I can’t follow the suggestions of anyone who recommends using a microwave for cheesemaking (or any real artisanal cooking). Couldn’t take them seriously after that.In conclusion, since the directions aren’t worth the paper their printed on (microwave bias with a dash of drama), the cultures aren’t cared for (or at least I wasn’t informed to care for them properly) the thermometer doesn’t work (not their fault but they included it and I wanted it specifically for cheese making so they are accountable), and the rest of the included materials you can buy at walmart for much much much cheaper…. long rant conclusion… just buy the Mesophilic Culture and Calk Lipase from somewhere else and YOUTUBE whatever cheese you want to make.

I was very surprised with the size of the package as a whole and then each component when I first received it. I was put at ease though after reading their flyer which quickly addresses the portion sizes an the fact that you use so little of each the items will last a long time.When I made my first batch of mozzarella cheese I found they were right. This will all last me quite a while so am please with the purchase and feel it is a good deal for the price.I have made mozzarella cheese twice now and am ready to branch out and try making different kinds from the recipes that are included.

As we were Sheltering-at-home for the Covid-19, we were looking for new, fun projects to occupy ourselves. Making our own cheese has been on our “We really should try this” list for a while, so I ordered this kit. Making our first batch of mozzarella was really exciting! Ricotta is quite easy and we are looking forward to advancing to Monterey Jack and cheddar. The kit has some of the essentials for starting cheese cultures, but read the description and especially the items shown as “people often buy these together” suggestions. You may have everything you need or you may need to acquire them. The cost of the kit is really high for the contents. The booklet is helpful and the youtube presentation is of value. It’s helpful to have many of the things needed to get started on cheese making together in one package, but a little research would allow you to buy the ingredients yourself for less money. Combined with the equipment required and some of the right type of milk, this would be a really fun gift.

While I was hoping to save money by making my own cheese, I found this a great project for my 10-year-old granddaughter and I. We made mozzarella and then put it on our homemade pizza. Everybody thought it was great! Looking forward to trying some other the recipes.

The thermometer is LITERALLY a dollar store thermometer and it does NOT take accurate temperature. Used my digital meat thermometer and found out the cheap one was 4 degrees off…that’s after I wasted 2 gallons of goat’s milk on 2 different kinds of cheese from their recipe booklet. Also there’s no way in JULY it is ok for the 2 cultures to be shipped via 2 day sitting in the back of a box truck for days. Probably another reason why the cheese did not form!
